Grandma Tiny's Refrigerator Rolls
This
has been in the family
for at least 40 years
I'm aware of. I got this from my mother, Adrienne Yetter, who gave it to me. When it
says to shape the rolls, we usually roll out pieces about 8 inches long
by about 3/4" wide, and make an overhand knot.
Ingredients:
- 2 cups lukewarm water
- 1/2 cup sugar
- 1 1/2 tsp salt
- 1/8 tsp grated lemon or orange rind
- 2 pkgs yeast
- 2 dashes mace
- 1 egg
- 1/4 cup soft shortening
- 6 1/2 - 7 cups sifted flour
Directions:
- Mix water, sugar, salt.
- Stir in yeast until dissolved.
- Add eggs, shortening, mace, and rind.
- Add flour, stirring with a spoon, then by hand.
- Put dough into refrigerator to store, up to 5 days
- Shape rolls into desired shape.
- Cover, let rise until light, 1 1/2 - 2 hours.
- Bake 400 degrees F, 12-15 minutes.
Makes about 3 1/2 dozen rolls.
