Grandma Josie's Spanish Rice - Liz's Spanish Rice
This has been in the
family for at least 50 years I'm aware of. This was made by Grandma
Josie, by her daughter Liz, and Liz's daughter Kim.
Ingredients:
- 1 cup rice
- 1/2 of a 15 oz. can of tomato sauce
- 2 cups water
- Vegetable oil
- Optional:
- Some chopped onion, about 1/2 cup
- Salt and pepper to taste, about 1/4 tsp each.
- Chicken bouillon or broth can be substituted for some of the
water
Directions:
- Put some oil in frying pan
- Brown rice until golden brown
- Optionally, add onion during or after frying rice
- Add tomato sauce, water. Add optionally salt and pepper,
bouillon or broth.
- Cover and cook.
- Done when all the water has been absorbed.
Serves about 4.
